Description
Pea shoots taste sweet, just like fresh green peas, and Indian palates take to them instantly. The leaves are dark green and tender, and some shoots carry little curly tendrils.
Add them at the very end of a stir-fry, float them on soup, tuck them into a sandwich or toss them with a salad. They take 10–14 days to grow, longer than most greens. If the lower stem feels firm, eat the tender top raw and add the rest to a sabzi.
How to use
Stir-fry, soup, salad.
